Assists in overseeing kitchen operations and performs all aspects of food handling, preparation, cooking, serving, storage, and cleaning in a detention/residential setting for clients in Division of Corrections’ facilities. Valid Driver’s License and good driving record that meets the requirement of Sedgwick County Fleet Vehicle Operation and Usage Policy. Personal vehicle for use when county vehicle is not available (employee reimbursement is provided by County). Proof of liability insurance on personal vehicle. Pass legal background check, Child and Adult Abuse & Neglect Central Registry checks, KCJIS Security Policy (fingerprint) check, and pre-employment screen for alcohol and drugs. Must also meet the required conditions contained in KSA 65-516 and KAR 28-4-356.
Essential Job Functions:
• 40% - Food Preparation - Prepares soups, cooks meat by grilling, frying, boiling, broiling, roasting, deep-frying or barbecuing. Makes bread and desserts, including pastries, cakes, and cookies. Operates, monitors, cleans, and maintains kitchen equipment such as milk machine, dishwasher, fryer, stove, and oven. Washes dishes and cleans the kitchen. Maintains supply of food, kitchen supplies, cookware, trays, glasses and utensils. Wraps, labels, stores, and disposes of leftover food in a timely manner. Ensures food preparation is done in a timely manner to meet schedules and records meal counts (amount prepared, served, and leftover) daily for each meal served. Serves food on trays using proper portion assigned. Washes, stores and cooks vegetables; prepares salads, all breakfast items; cuts and wraps meats for future use.
• 35% - Food Management - Plans and follows standard recipes in preparing a large volume and variety of foods; serves meals at regularly scheduled times. Must demonstrate knowledge of the nutritional needs of clients, practice sanitary methods of food handling, be sensitive to individual, cultural and religious food preferences of clients, and be understanding of the needs and types of special diets and varieties of food preparation required in this setting. Ensures proper food handling to maintain food quality and ensure food safety; tests cooked foods to determine if properly cooked and seasoned. Must work well with coworkers and supervisors and display appropriate customer service skills in performance of duties.
• 20% - Quality Assurance - Coordinates and receives the storing and handling of food deliveries; reviews invoices for accuracy, stores items properly to prevent spoilage; rotates food items for freshness. Assists the Food Services Manager in the oversight and preparation of food and beverage items to ensure objectives are achieved. Performs related work as required. Makes customers/clients and their needs a primary focus of one’s actions; acts with customers in mind and strives for continuous improvement in products and services. Identifies opportunities and issues, and proactively acts and follows through on work activities to meet goals. Maintains a sense of purpose, value, and ownership of their work. Works independently with little direction. Participates as an active and contributing member of a team to achieve team goals. Works cooperatively with other team members, involves others, shares information as appropriate, and shares credit for team accomplishments. Demonstrates a high level of dependability in all aspects of the job. Adapts quickly to change and easily considers new approaches.
- High school diploma or equivalent. Transcript verifying education credits is required.
- Two years of experience in institutional or large volume cooking. Professional references are required to verify the related work experience.
- Food Handler’s Certification – Sedgwick County Environmental Health Department.
Commercial and industrial kitchen quipment.
- Significant lifting (up to 50 pounds), carrying, pushing, and/or pulling; frequent bending, twisting, standing, walking, reaching, stooping, kneeling, and crouching; significant finger dexterity.
- Typically, the job requires 10% sitting, 20% walking and 70% standing.
- Requires the ability to operate a motor vehicle to change worksites.
- Requires sufficient hand-eye coordination to perform semi-skilled repetitive movements needed during the preparation of food such as using a knife to cut meats and vegetables.
- Dependable and timely attendance is required. Must maintain appropriate levels of personal hygiene and sanitation.
- Must follow guidelines for food service dress code.
- Requires sufficient abilities in vision, hearing, and the senses of smell and taste in order to complete tasks which involve perception, discernment, written, verbal, and listening skills.
- Sufficient sight to complete tasks safely and operate a motor vehicle.
- Duties performed typically indoors with exposure to some temperature extremes (walk-in freezer and around heated equipment) and some hazardous conditions (slick floors, equipment temperatures, grease, etc.)
- May be exposed to negative comments and hostile opinions of clients.
- Must be available to work outside normal scheduled hours when needed.
- Reasonably anticipated exposure to Blood Borne Pathogens (BBP).
