Supervises, coordinates, monitors, and participates in all aspects of the Juvenile Services food service operations within the Division of Corrections.
Essential Job Functions:
35% - Food Service Management - Manages the day-to-day food services operations. Receives and responds to vendor inquiries and provides technical information regarding the food service operations. Compiles and verifies payroll information, and implements any necessary corrections. Processes and files all invoices according to month purchased. Coordinates, evaluates, and plans menus; reviews inventories, purchasing practices, delivery schedules, prices, previous menus and recipes. Plans menus by considering color, texture, flavor, size, temperature and shape of food to comply with KSDE. Tests foods to determine if properly prepared and seasoned. Plans and prepares special diet needs; to include but not limited to, allergies, gluten free, diabetic/ and religious diets.
35% - Quality Assurance - Oversees and calculates menus according to child nutrition guidelines, and plans quantities that will serve meal requirements; records calculations on production record sheets and documents required data. Monitors costs of recipes and menus to ensure compliance with the food budget. Assists in the preparation of the food service budget. Monitors facilities to ensure proper procedure, safety and sanitation of the work environment. Performs internal audits to document compliance. Ensures that kitchen equipment is maintained in optimal condition; monitors equipment maintenance and troubleshoots issues. Implements and monitors new food service procedures, distributes updated information regarding the food service operations. Ensures that all staff are trained and evaluated on their knowledge of and adherence to compliance policies and procedures specific to their jobs. Annually review, update and training on policy and procedures.
25% - Performance Management - Conducts staff interviews and recommends hires; plans, schedules and assigns work to staff; establishes priorities; instructs and trains in correct methods; checks and approves work; reviews and evaluates employee performance. Assesses, analyzes, and implements quality control procedures. Prepares and maintains food service personnel, purchasing, and other complex food service records. Ensures compliance with KSDE and DCF regulations and procedures. Electronically files for state reimbursements by deadlines.
5% - Performs related work as required.

Detailed-Oriented: Ensures information is complete and accurate; follows up with others to ensure that agreements and commitments have been fulfilled. Performs quality assurance checks.

Planning & Organization: The ability to determine activities and projects toward measurable goals and standards, setting these in collaboration with others so as to arrive at a clear understanding and elicit commitment.
Time Management: Shows ability to plan, schedule, and self-direct work. Displays a high level of effort and commitment towards completing assignments in a timely manner; works with minimal supervision and is motivated to achieve.
Educational Requirements: High School Diploma
Years of Experience: Three years of responsible administrative food service supervisory experience. Professional references documenting the years of related worked experience are required.
License, certifications, etc… Food Safety Basics training. Completion documentation required. Valid Driver’s License and good driving record that meets the requirement of Sedgwick County Fleet Vehicle Operation and Usage Policy. Personal vehicle for use when county vehicle is not available (employee reimbursement is provided by County). Proof of liability insurance on personal vehicle. Pass legal background check, Child and Adult Abuse & Neglect Central Registry checks, KCJIS Security Policy (fingerprint) check, and pre-employment screen for alcohol and drugs. Must also meet the required conditions contained in KSA 65-516 and KAR 28-4-356.
Educational Requirements: Associate’s degree in Business Management, Food Sciences or related field. Food Handler’s Certification – Sedgwick County Environmental Health Department. Certified transcripts(s)
Years of Experience: Four years of responsible administrative food service supervisory experience. Professional references documenting the years of related worked experience are required.
Physical Requirements of Position:
Requires the ability to exert moderate to significant physical effort in sedentary to stressful work involving moving from one area of the office to another, lifting of food commodities, standing, walking, stooping, stair climbing, and driving to other locations. Ability to lift 50 lbs.
Must maintain appropriate levels of personal hygiene.
Dependable and timely attendance is required.
Requires sufficient abilities in vision, hearing, and senses of touch, smell, and taste in order to complete tasks which involve perception, discernment, written, verbal and listening skills.
Requires the ability to operate a motor vehicle.
Requires sufficient hand-eye coordination to perform semi-skilled repetitive movements such as keyboarding, use of office equipment, and motions needed during the preparation of food. Significant finger dexterity is necessary to perform tasks.
Requires sufficient visual acuity to safely complete tasks and operate a motor vehicle.
Testing will be completed if chosen for interview.
Industrial kitchen equipment
Usual working days/hours: Various hours and days including holidays and weekends; some overtime may be required
Location of work: 700 S Hydraulic
Work is typically performed in an office or in kitchen areas with some temperature extremes (walk-in freezer and around heated equipment) and some hazardous conditions (slick floors, equipment temperatures, grease, etc.) Must be available to work outside normal business hours when needed. Reasonably anticipated exposure to Blood Borne Pathogens (BBP).
